What you need to know:
Prep time: 10 mins
Ingredients for 2 large glasses:
7 teabags or 7 tsp black tea
100 ml sparkling water (optional)
2 small lemons
2 sprigs of peppermint
300 g mixed berries fresh or frozen
3 tsp brown sugar
10 ice cubes
1. Boil 400 ml water and pour into a teapot with the 7 teabags. Steep for 3 mins then remove the bags or tea leaves.
2. Wash the lemons and grate the rind from one of them. Squeeze both lemons and pluck the peppermint leaves from the stalks. Pour the juice, rind and peppermint leaves into the tea.
3. Add the berries, sugar and ice cubes to the tea mixture. Add the sparkling water if you’re using.
4. Pour the tea into the tall glasses and serve immediately.
