Gluten-Free Pigs in Blankets

Pigs in blankets?! You will find these in every English Christmas dinner and probably also accompanying other roasts or at children’s parties etc. Everyone loves them, they are so easy to make and definitely go well with any meats and finger buffets and can be served hot or cold! Pigs in blankets are mini cocktail sausages wrapped in bacon strips!

What you need to know:
Prep time: 5 mins
Cook time: 20 mins
Oven temp.: 180-200°C

Ingredients:
Gluten-free cocktail sausages or large GF sausages sliced up into smaller bite size pieces
lots of bacon rashers cut lengthways into strips, the thinner the better
Coconut oil (if baking)

Method:

1. Wrap one bacon strip around each cocktail sausage, place on a baking tray, add the oil and put in a pre-heated oven for about 20 mins until both sausage and bacon are cooked through. Alternatively you can grill the pigs in blankets for a healthier version. When cooked, remove from oven and either serve immediately or serve cold with a cocktail stick put into each piece. Make as many as you like! They also freeze superbly!
