So I came home from work today and found my amazing husband in the kitchen baking! The sweet delicious aroma drew me in and I discovered he was baking me gluten free love heart cookies! Just love him!
This recipe uses little sugar and instead of butter, coconut oil / fat is used for extra healthy nutrients; coconut oil is rich in anti-oxidants and bursting with the natural microbial and antibacterial agents caphrylic and capric acids, which makes these little gems low sugar, low fat and quite deliciously simple angelic cookies perfect to accompany a cup of tea. What you need to know:
Prep time: 20 mins
Cook time: 15 mins
Oven temp.: 180°C / 360°F
Ingredients for 40 gluten free cookies:
6 oz / 180 g / 1 1/2 cups gluten free flour
4 oz / 100 g / 0.5 cup sugar
4 oz / 100 g / 0.5 cup coconut oil / fat
pinch of salt
1 teaspoon of vanilla extract
1.Preheat oven to 180°C. Combine all ingredients into a bowl and mix well until a soft dough forms and everything sticks nicely together.
2. On a gluten free floured surface roll the dough evenly out to a 5mm thickness.
3. Using your favourite pastry or cookie cutter cut out the cookies out and place on a baking sheet on a baking tray. Continue until all the dough is used up.
4. Place the cookies into the preheated oven and bake for 15 mins or until they are golden brown. When done remove from the oven and leave to cool.
5. Decorate your gluten free cookies with icing, sprinkles or simply dust with sieved icing sugar and enjoy with a cup of tea!
